Cream of Celery Soup

3 tablespoons butter
1 medium onion, diced
2 cups diced potato
10 stalks celery cut into ½ inch slices (6 cups)
5 cups good quality chicken or vegetable stock
¼ teaspoon sea salt
¼ teaspoon white pepper
2 tablespoons heavy cream
Celery leaves for garnish

Melt the butter in a soup pot, add the onions and cook over medium heat until translucent, about 7 to 8 minutes. Add the potato, celery and stock. Simmer for about 20 minutes (potatoes should be well done). Puree and strain through a fine sieve. Stir in cream. Garnish with celery leaves and serve.
