Creamed Horseradish Dill Sauce
½ cup fresh grated horseradish
½ cup heavy cream
1/8 teaspoon salt
1 teaspoon dill weed
Grate horseradish as finely as possible, a microplane is ideal or use a box grater. Using a hand mixer, beat cream until stiff peaks form, fold in horseradish, salt and dill. Store in refrigerator at least two hours to let flavors meld. Delicious with roast meat or beets.
