Basic Vinaigrette

This recipe is from my friend, Margo.
If you have not yet made your own salad dressing, you will be thrilled at how easy and delicious it is! Any fresh herb will work in this recipe.
Whisk 1 tablespoon vinegar (white wine, red wine, cider) or lemon juice with salt and pepper to taste. Whisk in a clove of minced or pressed garlic, 1 teaspoon minced shallot (or onion if that’s what you have on hand) and ¼ teaspoon Dijon mustard. Whisk in slowly 3 tablespoons olive oil. Now it’s time to add minced fresh herbs. Start with a teaspoon and taste, adding more if you want to.





Green Goddess Dip or Dressing


2 oil-packed anchovy fillets, rinsed and blotted dry
1 large clove garlic, smashed
2 green onion, including 3 inches of the green tops, but into 1/2 inch lengths
1/4 cup lightly packed fresh flat leaf parsley
1/4 cup lightly packed fresh cilantro leaves
1/4 cup chopped fresh dill
2 tablespoons coarsely chopped fresh tarragon leaves
6 large fresh basil leaves, torn into small pieces
2 tablespoons white wine vinegar
1 teaspoon salt
1 teaspoon granulated sugar
1/8 teaspoon freshly ground black pepper
3/4 cup sour cream
1/2 cup mayonnaise
